Creamy Tomato Sauce

A happy accident that turned out really good so I had to share.

Ingredients:  4 servings

1 tbs of olive oil

quarter of an onion diced

2 minced cloves of garlic

3 tbs of tomato paste

1 tsp of dried oregano 

pinch of dried red pepper flakes - to taste (optional) 

2 vine tomatoes

handful of basil leaves

1 to 1 1/2 cup of chicken broth

1 tsp of sugar - to taste

1 tsp of sugar - to taste

1 cup of diced mushrooms

1 tbs of heavy whipping cream.

Step 1: Build the Aromatic flavor

Heat a medium sauce pan to a medium heat with olive oil then add diced onions, garlic, tomato paste, chili pepper and dried oregano. Heat for 2-4 mins or until onions turn a golden color.

Step 2: Add the Sauce

Add tomatoes and basil into a personal sized blender / food processor and blend until it becomes a liquid. Add chicken broth and tomato basil mixture into the sauce pan. Allow the sauce to come up to a boil and then reduce heat. Adjust to taste with sugar and salt and let the flavors to develop before adding in the chopped mushrooms and heavy whipping cream. Let that all simmer for 10 mins before serving.

You can serve it with meatballs, your choice of pasta and of course parmesan cheese.
